〈目的〉過去50年から60年ほどの期間に刊行された公刊データ等を通じて、衣食住の変遷を可視化する試みに取り組んでいる。本研究では、食生活の変遷に関する考察の一例として、かつて地域で製造・販売(店頭・行商)されていた豆腐が、次第に製販分離・広域流通化していった経緯を検証した。地産地消やフードマイレージという概念が提唱されている中、今日では他県で製造された豆腐を主体に販売しているスーパーなども多いという現状をとらえ、豆腐の広域流通化の実態・背景およびその影響を周知したい。〈方法〉身近な地域(新潟)のほか、総務省「家計調査年報」等をもとに豆腐の消費に特徴がみられる都市として盛岡・那覇などを選び、調査対象とした。厚生労働省統計「衛生行政報告」をもとに、豆腐製造業の営業施設数(全国・県・政令指定市)の変遷を調べた。職業別電話帳をもとに、調査対象とした地域内における豆腐屋の数および所在地の変遷を調べた。豆腐屋の所在地を住宅地図にプロットし、豆腐屋の減少を10年程度の間隔で図示するとともに、各時点における豆腐屋の分布・立地等について考察した。〈成果〉新潟市中心部(新潟島地区 : 面積約10㎢、人口約6万人)を対象とした調査結果を示す。(1)職業別電話帳に掲載されていた豆腐屋の数は、1955年から10年毎に、8・22・21・17・11・5であった。1955年の店舗数については、当時の電話普及率を勘案する必要があるが、それ以降の変遷については、厚生労働省統計における全国・県データに概ね合致する傾向にあった。(2)豆腐屋の所在地について、かつては住宅地にも広く分布していた様子を住宅地図で確認でき、豆腐が地域密着型の食品であったことが示唆された。今後は、地域比較を行い、豆腐の生産・流通・消費にみられる地域性について検討する。(743字)
