项目摘要

本研究は、食品の特性や人間の感覚特性を評価する際の有用な情報となるよう、食感覚を表現する擬音語・擬態語を客観化することを目的とするものである。今年度は、昨年度収集・整理した食感覚の擬音語・擬態語53語について、食物のどのような性状を表現しているのか、また、用語を使用する際の個人差などについて検討し、以下の結果を得た。(1)人の属性と用語使用との関係昨年度の調査データの解析をすすめ、人の属性(性別・年齢・職業等)と用語使用の有無との関係を調べた。その結果、食感覚の擬音語・擬態語は女性の方が語彙が豊富であること、用語の認知度に男女差、年齢差のみられるものがあることが明らかになった。(2)五感との関係各用語が五感のいずれによって捉えられたかについて、配点形式のアンケート調査を実施し解析した。その結果、各用語がいずれの感覚によって捉えられているかが明らかとなった。これらの用語は何らかの形で触覚が関与しているものが多いこと、「触覚と味覚」のように全く異なる刺激を複合して表現する用語も多くあることが明らかになった。(3)食物の特性との関係用語から連想される食物について自由記述形式のアンケート調査を行い、数量化理論を適用し、各用語と食物との関係を明らかにした。
