The creation and stabilization of interesting many body states via open system control is based on the interplay between tailored reservoirs and strong interactions. In this project, we implement effective interaction between individual photons via controlled coupling to Rydberg states in an ultracold ytterbium gas. Utilizing for the first time an atomic species with two valence electrons for Rydberg-mediated photon interaction, we aim to realize strongly correlated systems of few to many photons with high degrees of control over both the coherent interaction as well as the dissipation channels. Focussing initially on a bottom-up approach to construct one-dimensional systems of up to ten photons, we aim to study multi-photon correlations in the outgoing light and explore the applicability of effective quantum field theories to interacting Rydberg polaritons.
