全国の食肉処理場の稼働状況等に関する文献・統計データ調査を中心に分析を進めた。この際，近年のHACCP導入による影響や食肉流通の特色との関係性，また新型コロナウイルスの拡大による影響についても考慮に含めた。これらにより，全国の食肉処理場の操業動向に関する基礎的な情報収集や分析を進めることができた。こうした分析を通じて，食肉処理場の合理化・効率化の在り方と，一方で，国産食肉の輸出拡大の可能性などに関する分析にも結び付きうる視座を検討することができた。
