Large-scale animal agriculture is inefficient and damaging to humans, animals, and the environment. Demand for plant-based meat is soaring, but products still do not match the sensory properties and cooking performance of traditional meat. Plant-based meat is missing one crucial ingredient: real animal fat.Fat is the secret to delicious food. The plant oils used in many meat alternatives aren't a suitable substitute because they are structurally and chemically different to animal fat, resulting in a low melting temperature, poor taste and greasy mouthfeel.
