Canada is the second largest producer, and the largest exporter of mustard seeds. The crop is draught resistant, and its acreage can be readily expanded. While mustard is primarily used as a condiment, mustard proteins have excellent emulsification, oil and fat binding properties that are not well utilized, due to the strong flavour of mustard. Deheated mustard, which takes advantage of mustard proteins functionality, has been used as a meat binder for some three decades, but its use is limited.
