Iron deficiency anemia adversely affects the health of some one third of the world's population - mostly in developing countries. Iron deficiency anemia leads to increased maternal death, decreased immunity to disease and significant decrease in physical work capacity. Provision of iron through the diet can reduce or eliminate this problem. Foods rich in bioavailable iron are beyond the reach of the poor, and therefore iron fortification of staple foods, such as salt, rice and oil are being pursued. The fortified food must be widely consumed at reasonably constant level throughout the target society, to ensure effective intake, without the danger of overdosing.
