Many parts of birch trees have functional uses such as basic building materials, medicinal products and food. 52 North Beverages Ltd. is a British Columbia based beverage manufacturer specializing in the processing of a shelf stable birch sap beverage made from birch trees in British Columbia's sub boreal forest. As the phytonutrient profiles of B.C birch sap is relatively unknown, 52 North is interested in utilizing BCIT's Natural Health and Food Product Research Group's expertise and capabilities to develop a method for the evaluation of the phytonutrient profile of the processed sap. This partnership with the Natural Health & Food Products Research Group seeks to investigate the potential health benefits of birch sap through the characterization of its chemical profile. This will allow 52 North Beverages to develop and optimize their processing parameters to maximize product quality and integrity.
