Jakeman's Maple Products (Jakeman's) is a Beachville, Ontario maple farm and innovative agri-food manufacturer that processes 100% Canadian-made, all-natural pure maple syrup and maple products. The formation of lumps during storage of maple sugar, because of its tendency to absorb moisture, has recently resulted in unsatisfied customers (both at store and retail levels), causing Jakeman's to suffer a loss in market share, and to experience difficulty in keeping up with the customer demand for product. Therefore, Jakeman's is seeking support from the research team at Conestoga College's Institute of Food Processing Technology (IFPT) to conduct experiments to find a solution for this problem before they establish production in a new and larger facility. The scope of research will resolve the lumping issue by determining the optimal biodegradable packaging material with the highest moisture barrier properties that is commercially available and can be used for packing maple sugar in single-serving size stick packs.
