The proposed research addresses the microbial safety and quality of food from gate to plate. The Nomionee's research aims to improve control of pathogenic bacteria in animal production, and to assess the bacterial resistance to physical and chemical preservation methods that are used in in food production. Dr. Gänzle's research will also employ health beneficial lactic acid bacteria to improve animal health, and to generate metabolites that will inhibit pathogenic bacteria in food. Taken together, Dr. Gänzle's research program will develop novel technologies that are suitable for food preservation with reduced use of additives, and with reduced impact on the nutritional or sensory quality of foods.
