Producing Maple syrup is based on a process which is in ongoing progress in order to optimize maple syrup production by achieving a very accurate control of sugar concentration in consumable maple syrup. Having an extremely accurate and real time sugar sensor during the fabrication process of maple syrup is extremely critical in order to monitor sugar concentration from sap to final maple syrup. In this food industry, Canada is the largest world producer of maple syrup. Thus, having such a sugar sensor and monitoring system has a huge financial impact on Canadian producers and consequently a significant impact on our Canadian maple industry. Nowadays, industrial and reliable devices to measure sugar concentration during maple syrup fabrication are mainly based on refractometry. However, accurate refractometers are very expensive which makes them not affordable to several producers. Thus in this proposal we aim to develop a new ultra-high sensitivity sugar sensor for maple syrup industry in order to improve the production of maple syrup when it is transformed from sap to industrial syrup.#(cr)#(lf)La production du sirop d'érable est un processus en amélioration continue grâce à un contrôle de plus en plus précis de la concentration du sucre dans le sirop d'érable dédié à la consommation. Ainsi disposer d'un capteur de sucre extrêmement précis et en temps réel permettant de mesurer la variation de la concentration du sucre durant le processus de fabrication du sirop d'érable est extrêmement essentiel pour surveiller la concentration en sucre depuis la sève jusqu'au produit final. Dans cette industrie alimentaire, le Canada est le plus grand producteur mondial de sirop d'érable. Par conséquent, disposer d'un tel capteur de sucre a un impact financier majeur sur les producteurs canadiens et par la suite sur notre industrie acéricole canadienne. De nos jours, les appareils industriels fiables permettant de mesurer la concentration de sucre durant la production du sirop d'érable reposent principalement sur la réfractométrie. Cependant, les réfractomètres précis sont très coûteux, ce qui les rend inabordables pour plusieurs producteurs. Ainsi, dans cette proposition, notre objectif est de développer un nouveau capteur de sucre ultra précis pour l'industrie du sirop d'érable afin d'améliorer la production de sirop d'érable lorsqu'il est transformé de la sève en sirop industriel.
