英文摘要
Fermented dairy products are the ideal delivery carrier of lactic acid bacteria (LAB). How to protect survival and beneficial growth of LAB is the key problem to be solved in the dairy industry. The adhesion of LAB to milk components determines their localization in the matrix, which affects the growth of LAB and the maturation of fermented milk. Through previous studies and literature review, the applicant noticed that LAB tended to attach to milk fat globule membrane (MFGM). The MFGM protein is highly glycosylated and has an adhesin receptor similar to that of the intestinal tract. The applicant assumes that "LAB may be interacted with MFGM protein, and MFGM protein may mediate the growth, metabolism, protection and adhesion characteristics of LAB". Therefore, based on the understanding of the tendency of LAB to adhere to MFGM, the project explored the interaction effect and mechanism between LAB and MFGM protein. After constructing the microcapsule carrier of LAB using MFGM protein, the protective effect of MFGM protein on LAB was explored. The project further explored that effect of the MFGM protein mediated the adhesion and colonization of LAB. The implementation of this project can further understand that the interaction effect with the milk matrix components; provide new ideas for improving the survival rate and adhesion characteristics of LAB. It also provides a theoretical basis for the development of dairy product containing LAB and MFGM protein.
