The quest for quantum degenerate Fermi gases interacting through the anisotropic and long-range dipole-dipole interaction (DDI) represents at present an exciting and fast developing branch within the cold-atoms research program. Recent experimental progress in trapping, cooling, and controlling polar molecules with large electric dipole moments has motivated us to develop a variational time-dependent Hartree-Fock theory for determining both the static and dynamic non-superfluid properties of such systems in the low-temperature hydrodynamic regime, where frequent collisions assure the equilibrium locally. Since the superfluid phase is the most interesting regime in dipolar Fermi gases, we aim at analyzing their rotational properties as this would allow to detect fingerprints of DDI-induced anisotropic superfluidity. Furthermore, prospects for collisional control through applied electric fields suggest to extend our approach within the project to a Boltzmann-Vlasov theory at finite temperature, so that dipolar Fermi gases can be described all the way from the collisionless to the hydrodynamic regime. Finally, in view of many on-going experiments, we shall also generalize our theory to include the effects of spinorial degrees of freedom. Indeed, the delicate interplay of the DDI and the short-range and isotropic contact interaction in these systems is expected to lead to new exotic phases.
