本年度は、2021年3月までに行った語彙統計をもとに、グリモ・ド・ラ・レニエールの食をめぐる著作における味覚の表象を、同時代の料理書、行儀作法書、芸術批評、文学批評における〈味覚＝趣味〉と照らし合わせる作業を行った。2020年には新型コロナウイルス感染症流行の影響で在外研究の延期を余儀なくされたが、本年度7月からフランスでの研究活動を行った。ヨーロッパ食文化歴史研究所（IEHCA）やフランス国立図書館で一次史料と二次資料を渉猟し、それらをグリモの〈味覚〉をめぐる言説と照らし合わせて18世紀から19世紀初頭の〈味覚〉概念と人々の感性の変容を辿った。この分析を通して、この時期の芸術批評と料理書の関連、化学の躍進による自然科学をめぐる言説の変化などのなかに表出する〈趣味＝味覚〉の概念の変遷のなかにグリモの美食言説を位置づけることができるようになった。この成果の一部は、2021年刊行のヨーロピアン・フード・ヒストリー国際研究委員会（ICREFH）の論文集にまとめている。6月にはIEHCA主催の国際シンポジウム（パンデミックの影響によりオンライン開催）において、グリモの美食文学をめぐるパネルディスカッションを企画し、日本、フランス、アメリカの研究者とともに研究報告と議論を行った。同パネルにおける研究報告では、グリモのテクストのみならず、著作に添えられた扉絵における〈味覚〉の表象に着目し、視覚文化の観点からもグリモの独自性を明らかにした。グリモの著作は、フランスガストロノミーを語るうえで多くの著者によって引用されてきたにもかかわらず、これまでほとんど本格的な学術研究の対象となってこなかった。そのため、このパネルで各報告者が食文化史、文学史、ソシアビリテの歴史といった多様な視点からグリモのテクストを読み解き、その歴史的・文化的な意義を議論する試みを行ったことは画期的であったといえる。
