研究の第２年目にあたる平成２６年度には、「異文化間食育プログラム」の開発を進めた。まず、研究代表者を中心として、前年度で研究の初年度にあたる平成２５年度に収集した研究データの整理・分析を進めることから着手した。具体的には、主として英語圏（北米とオセアニア）の海外の大学等に短期語学研修等で派遣された日本人学生を対象とした質問紙調査および面接調査の結果を詳細に分析した。続いて、その分析結果をもとに、初年度に作成した質問紙調査の項目などに修正加筆を行った。この修正版の質問紙等を用いて、新たに前年度とは異なる日本人長期留学生などを対象として質問紙および面接調査を行い、英語圏以外のアジアなどに留学した学生たちの食生活や健康状態に関して、より詳細なデータを集めた。この再調査についてもデータの整理・分析を進めた。最後に、これら２年間にわたる、さまざまな国や地域に多様な留学期間で留学した日本人学生の調査結果に基づき、研究代表者と研究分担者とで、新たな食育プログラムの試案を作るための打ち合わせを行った。その際、海外で学ぶ日本人留学生（日本の大学から派遣される日本人等留学生）を対象として提供すべき異文化間食育プログラムには、どのような教育内容を盛り込むべきであるかということについて検討を進めた。またその食育プログラムの内容をどのような場所や時期、方法や形態で学生たちに提供すべきかについての適切な方策についても検討を行った。
