[はじめに]日本の大豆自給率は、食用が21%であり、毎年作付面積が漸減している。全国で栽培される大豆は、育成品種が作付面積全体の90%を占め、エンレイ、タチナガハなど主要5品種で60%を占めている。東京在来大豆は、機械栽培による効率を最優先させた品種育成の陰で、食味は優れているが、収量が少ない、病害虫に弱いなどの欠点により、現代社会から忘れ去られてしまった大豆である。東京在来大豆の優れた形質の再評価および掘起しを東京大学生態調和農学機構の地域貢献事業である「大豆塾」に参加した市民とともに協働して進め、種子を増殖し、次世代に継承していくことがこの研究の目的である。[方法]東京在来大豆6品種(東京八重成、小笠原在来、比丘尼、目黒、みすず、青梅在来)と育成大豆2品種(エンレイ、タチナガハ)合わせて8品種の比較対照試験を行う。種子を取り寄せたジーンバンクには基礎データとして、主茎長や花色、百粒重、種皮色、へその色などの外見特性、タンパク質や脂肪の含有量などの成分特性が公表されている。しかし、煮豆や豆腐、味噌への加工適性や味覚などは未調査である。市民へ食味試験をしたアンケートおよび糖度計、豆乳濃度計などの計測値などを元に加工に適した品種を総合的に評価する。[結果]食味試験は、煮豆で行い、25名のアンケートを点数化した結果、在来品種のみすずが第1位となった。小粒大豆ほど点数が低くなる傾向を示した。豆腐も同様、13名のアンケートを点数化した結果、みすずが第1位となった。煮豆で比較的評価が低かった品種(小笠原在来、目黒)も豆腐に加工すると上位に浮上した。豆腐の食味試験に合わせて、豆乳濃度と糖度の測定も行った。在来品種の目黒がそれぞれ第1位、第2位になった。いずれの結果も在来品種の良食味が再評価される結果になった。米味噌への加工も行った。味噌の熟成を待って食味試験をあらためて行う予定である。
