生物多様性条約第10回締約国会議(2010年10月名古屋)が開催され,SATOYAMAイニシアティブを含む持続可能な利用,バイオ燃料,農業,森林,海洋など各生態系における生物多様性の保全及び持続可能な利用に関わる決定の採択などがなされた。人と自然との共生を考える取組みが今こそ社会レベルでも生活レベルでも実践されなければならない。そこで本研究では,世界最古の薬学書「神農本草経」に記述され薬効のある食材「小豆」を切り口に,家庭科からESDへのアプローチを試みた。具体的には,コスタリカを訪問し,多様な自然環境を体験するとともに,豆を使用したコスタリカの代表料理ガジョピントの調理方法を現地の方から学ぶなど,環境に配慮した生活や食生活についての資料収集を行った。また,有志生徒と本校グランド横にある広い荒地を開墾し,小規模ではあるが有機の畑を作った後,小豆や十六ささげ,じゃがいも,だいこんなどの栽培を行なったり,農家に出向いて作物の収穫体験をすることで,都市部での生活において自然を上手に利用する方法や自給食材を使用したバリアフリーな料理を考えさせた。さらに「豆食文化と未来の食卓」と題し,切り口の小豆をはじめ,コスタリカで取材したフリーホール豆やガジョピントなどの資料を組み込み,マメ科植物に共生する根粒菌の力について荒地開墾を熱心に行う生徒に調査発表させたり,家庭とも連携を取りながら,豆を知り,豆を極め,豆を活かす授業実践を試みた。豆は乾燥することで長期の保存ができるため,世界中で利用されており,多くの個性豊かな豆料理や加工食品がある。豆を中心にした栽培を体験させ,世界のさまざまな国の人々が培ってきた豆食文化を理解させることにより,人と自然との共生とは,未来の食卓のあり方とはどうあるべきかを考えさせることができた。
