The extract prepared from vegetables, crabapples, and the roasted Eucommia ulmoides Oliver leaves, Du-zhong tea, were examined to explore their effects on the differentiation of mouse 3T3-L1 preadipocyte cells into adipocytes. More than 40 kinds of vegetable extracts were prepared and examined. Among them, several kinds showed the enhancement of lipid accumulation while another several kinds inhibited the accumulation. The active components were now under investigation. More than 40 kinds of crabapple extracts were examined for 3T3-L1 lipid accumulation and most of them inhibited its accumulation. The apple polyphenols were partially responsible for the activity. The boiling water extract of Du-zhong tea inhibited lipid accumulation in 3T3-L1. The HPLC analysis of the extract identified catechin, protocatechuic acid, pyrogallol, and chlorogenic acid. The activity guided separation of Du-zhong tea lead the isolation of 5-hydroxymethyl-2-furaldehyde (HMF). HMF inhibited lipid accumulation at the concentration of 100 μM. Upon feeding Du-zhong tea powder to chicken, the lipid metabolism was influenced by the activation of PPARα.
