本研究の目的は、バングラデシュの冷凍水産物加工(特にエビ)におけるバリュー・チェーンを調査し、日本の消費者や輸入業者が求める様々な基準にどのように対応しているかを分析することである。平成20年度は、バングラデシュと比較するために、タイで調査する計画をたてた。タイは冷凍エビの輸出に関して先進国であり、後発のバングラデシュとは比較研究の対象として最適である。研究分担者は平成20年度にタイのエビ養殖場と加工工場を訪問し、安全基準への対応についてデータを収集した。また、東京農工大学の教員と情報交換をした上、東京で開催された「日本国際水産物・技術エキスポ(Japan International Seafood & Technology Expo 2008)」に参加し、日本の業界関係者と情報交換した他、米国、台湾、タイ、ベトナム、韓国、中国の参加者からも食品安全基準への対応に関する資料を収集した。調査の結果、厳しい食品安全基準や複雑化する消費者の好みに対応し、より付加価値の高い商品生産をできる体制を整えている国が日本への輸出を伸ばす一方、バングラデシュのような後発国は、未だこうした体制整備が追いついていない現状が浮かび上がった。この点で、バングラデシュの冷凍水産物業界は、タイの同業者から学ぶべき点が多くある。今後、タイへの研修機会などを増やすことで、バングラデシュの冷凍水産物業界がグローバル・バリュー・チェーンに参入する能力を高めることが期待される。調査の結果は論文にまとめ、また研究科内で公開セミナーを開催して発表した。

The purpose of this study is to investigate the quality of chilled water product processing (especially in Japan), and to analyze the quality of chilled water products in Japan. In 2010, the Ministry of Finance and the Ministry of Foreign Affairs of the People's Republic of China conducted a survey on the development of bilateral relations. The most important thing is to study the relationship between the output and the development of advanced countries. The research team visited the farm and processing plant in 2010, and collected data on safety standards. Tokyo University of Agriculture and Technology faculty and information exchange participants participated in the Japan International Seafood & Technology Expo 2008, and industry stakeholders from Japan, the United States, Taiwan, Japan, South Korea, and China participated in the food safety benchmark survey. The results of the investigation, the improvement of food safety standards, the improvement of consumer awareness, the improvement of the production system of high-value commodities, the improvement of the export system of Japan, the improvement of the development system, the improvement of the current situation, and the improvement of the system. The frozen aquatic products industry has a lot of problems. In the future, the opportunities for research in the field of frozen aquatic products will be increased, and the ability to participate in the field of frozen aquatic products will be improved. The results of the investigation were published in the research department.
