项目摘要

規範・倫理が未整備となっている培養肉・植物肉などの現状、食文化への受容の認識について、国際的にデータを収集し、分析を実施した。その一環として、新技術の受容について、日本とシンガポールにおける昆虫食と培養肉に関するマスメディアの記事の言説分析と比較を実施した (Matsuoka, Uchiyama, Woraitthinan, Kohsaka, 2023)。昆虫食の記事の分析から、グローバルな食料供給について言及する記事が両国共通する一方で、シンガポールのみでスタートアップへの言及が多いことが判明した。総体的には畜産業を含む産業的背景、宗教、食の歴史を含む両国の報道の差が把握された。また、政策の現状分析として、シンガポールなどの他国と日本の政策及び政策枠組を比較し、培養肉に関する総説から環境・政策面での議論を整理し(Miyake, Tachikawa, and Kohsaka, 2023)、培養肉では、EUやシンガポールにおける食や食料安全保障についてのアクションプランから研究開発推進政策につながる政策枠組を明らかにした。こうして得られた結果は、国際誌Food Research Internationalなどを含む学術論文、知財学会特集(フードテック時代における知財と風土[テロワール] 食文化と消費への示唆）等で発表した。同特集では産官学の寄稿があり、研究・政策の動向、受容について各方面からの示唆に富む見解が示された。口頭発表でも、第7回東京大学－ケンブリッジ大学合同シンポジウムにおいてフードテックの時代における風土の特性について、またベルリン日独センター共催シンポジウムにおいて日独の食の将来課題について議論を行った。社会的貢献として、成果は国連の生物多様性条約、農水省の食料・農業・農村政策審議会基本法検証部会の議論でも還元された。
