This subproject is one of many research subprojects utilizing the resources provided by a Center grant funded by NIH/NCRR. The subproject and investigator (PI) may have received primary funding from another NIH source, and thus could be represented in other CRISP entries. The institution listed is for the Center, which is not necessarily the institution for the investigator. This is a study looking at how a high carbohydrate versus a low carbohydrate diet affects certain risk factors for developing heart disease. To investigate this, we will perform three 24-hour feeding studies. During each 24-hour period, we will specifically look at 2 things: 1.) Levels of a type of cholesterol in the blood (called remnant lipoproteins) circulating in the bloodstream while eating food consistent with your assigned diet and, 2.) Function of blood vessels after eating, assessed on these same 3 days. The first study will be done before starting the assigned diet. At this time, subjects will eat the same type of diet, one that is consistent with USDA recommendations. The second study will be done 8-12 weeks after starting the assigned diet and food eaten during the study will be consistent with the assigned diet. The 3rd study will also be consistent with the assigned diet and will be done when each person has reach a point where his/her weight has stabilized and he/she is no longer losing weight.
