Biofume Technologies Inc. is a company that researches, develops and manufactures natural-based products to address the challenges faced by the food industry. Currently, the company is interested to develop a carrier system, in the form of patch or sachet, to control the release of antimicrobial allyl isothiocyanate (AITC), which is an effective antimicrobial compound derived from the company's formulated mustard seed meals (FMSM). To prototype the envisaged system, the company needs supports in packaging, polymer processing, and encapsulation technologies, which are currently lacking within the organization. In this project, the PI will assist Biofume to develop methodologies to encapsulate FMSM in film or fiber carriers, using extrusion casting and electrospinning technologies, respectively. Canada is the world largest exporter of mustard seed, accounting for 35% of the world production and 50% of global exports. Mustard seed is used primarily in the condiment and food applications; successful development of the envisaged active packaging technology will expand the use of mustard seed, increase the crop value, and benefit mustard seed producers in Canada. For food producers, the innovative active packaging technology will help extend shelf-life of food products, thereby expanding their market potential, and enhancing their competitive advantage. By inhibiting unwanted microbial growth, the safety and quality of food products will be improved, which will ultimately benefit the well being of consumers. Conceivably, the immobilization techniques may be also applicable for other natural products that exhibit antimicrobial properties.
