This proposal is for collaboration between the applicant and the industrial partner (Atkins & Frères Inc., Mont Louis, Qc) to transform fish processing discards generated by the company into useful commercial products for food and non-food uses, and to create new opportunities to grow the company. The industrial partner engages in the commercial production of smoked salmon, trout, mackerel and other fish species. Their operation generates abundant fish skin waste conservatively estimated at 2.8 tons/ yr that is not valorized; rather, it is disposed of at high cost to the company and simply incinerated, an approach that seriously harms the environment.
