The Saskatoon Colostrum Company Ltd. (SCCL) plans to develop a shelf-stable liquid colostrum product that will be used to supplement or replace maternal colostrum for newborn calves. Significant challenges are microbial contamination and physical separation of the cream and protein rich phases upon storage. While the problem with microbes can be addressed by irradiation, the proposed research proposal will investigate the feasibility of producing a stable dispersion of colostrum with a minimum shelf life (no phase separation) of 1 year at room temperature. In the proposed project, colostrum phase separation will be prevented by developing a highly stable dispersion with extremely small fat globules. Liquid colostrum will be mixed with small molecule emulsifiers (SME) and subjected to high-pressure homogenization. The SME will reduce the
