This research proposes to use natural biological products with anti-microbial action to prevent contamination of packaged food. The anti-microbial agents will be incorporated directly into the food packaging material to provide a natural mechanism for food preservation. This technology will serve to improve or to be used as an alternative to current industrial practices for the preservation of food products. This work will be of interest to consumers looking for organic and natural foods and to the food industry as it provides an appealing, cheap, simple method to prevent and control food contamination.
