Haskap berries (Lonicera caerulea L.) are rich sources of bioactive compounds (e.g. anthocyanins, phenolic
compounds, and vitamin C) and are associated with many health benefits. They are a recent arrival to the North
American market. La Have Forests produce a range of haskap products under the Haskapa brand, targeted
toward the premium and gourmet food market, where the nutritional and health-related benefits of haskap
products are particularly important. Their products include juice, dried berries, haskap syrup, jam, and
chutneys. At present, the by-products of juice production are further processed into dried berries and haskap
syrup, with the juice and dried berries being their most important products in terms of revenue and sales. This
Engage-plus project will improve the processing of Haskapa juice and dried berry products in order to enhance
their yield and nutritional quality.
