This projects aims to remove or decolourize pigments found in the edible sea plant Mazzaella Japonica usingextraction or treatments with generally regarded as safe (GRAS) chemicals acceptable in treatment offoodstuffs for human consumption. Extraction with selected non-aqueous solvents or aqueous solventscontaining a range of acceptable salts, mild oxidants and reductants or variable pH will be explored. The goalis to develop a reliable process that yields pale pink or green Mazzaella Japonica tips while maintaining thedesirable texture and taste of the plant.
