The marijuana sector is the next big growth market in Canadian natural resources. It offers investment and**employment opportunities in medicine, food and beverage, technology, agriculture and recreation. It is believed**that market share will be taken away from the current $1.2 trillion alcohol industry market, with new marijuana**beers and beverages that are alcohol-free. The legalization of cannabis for recreational use in Canada will uncover**new markets for new products and will occupy an enormous space. The commercial partner in the project is**developing hemp based beverages and this project is focusing on the additional conversion of C5-sugars that are**present in hemp-hydrolysate and are not a common part of traditional brewing. Typical yeasts do not convert the**C5 sugars and will therefore result in a beverage with high residual sugars. To avoid this problem the a cofermentation**with a traditional lager yeast and a C5 converting yeast will be evaluated and developed.
