Sugar beet in southern Alberta is a major crop and generates $32.2 million in farm receipts annually. Lantic's plant in Taber is the only sugar beet refinery in Canada, producing 100,000 tons of sugar per year, or 10 percent of the total Canadian sugar production. Sugar beets growers in Alberta are exploring alternative uses of their crops to increase acreage and profitability. Sugar beets are gaining attention as a sustainable source of food ingredients as well as biochemicals with multiple applications. The present study in partnership between Lethbridge College (LC) and Alberta Sugar Beet Growers (ASBG) which represents over 150 sugar beet growers focuses on utilizing sugar beet juice as an ingredient for road de-icer. The present research project focuses on exploring the properties and compositional analysis of sugar beet juice and analyzes its potential to be used as a sustainable and eco-friendly de-icer for winter road conditions in Canada.
