项目摘要

佐賀県全域の栄養士配置基準がない介護老人施設（本研究では認知症高齢者グループホーム、介護付有料老人ホーム、住宅型有料老人ホーム）に勤務する者を対象に、郵送法によるアンケート調査を実施した。このアンケート調査は、コロナ禍の影響により昨年度に実施が困難であった施設および補足が必要な施設へのアンケート調査である。アンケート調査の集計を行い、昨年度のデータと合わせて分析した結果を「栄養士の配置基準がない介護老人施設における食事サービスの実態」としてまとめ、論文投稿した。本報告の分析対象者は、同意があった食事サービス業務に従事する者167名（食事サービス業務の従事時間が1時間未満の者は除外）であった。食事サービス（栄養管理含む）業務に管理栄養士もしくは栄養士が従事していない施設が58.1%となり、半数以上の施設で栄養管理業務に専門職以外の者が担当しており、栄養管理が十分に行われていない可能性が考えられた。また、献立作成業務でも約７割の施設が管理栄養士・栄養士以外が担当していた。このことから利用者に必要な栄養素量の献立が作成されず、必要な栄養量を満たした食事を提供することが困難である可能性が考えらえた。本報告により、これまでほとんど報告がなかった「栄養士の配置基準がない介護老人施設における食事サービスの実態」の一部が明らかになり、入所者に対する栄養管理が十分行われていない可能性が推測された。来年度は、栄養士の配置基準がない介護老人施設の栄養管理の現状をさらに調査し、栄養士配置義務のある施設と比較して、栄養士配置基準がない介護老人施設の栄養管理の実態を検証する予定である。
