项目摘要

コロナウイルス感染症の拡大により対面型の食事提供等の食事支援の実施が難しい状況にある。そこで，2020年から，高学年児童（小学校4～6年生）を対象に，自宅で調理動画を視聴し，調理を行う非対面型の食事支援プログラムを試行してきた。その結果，当プログラムは，調理経験を通じて，家族の良好なコミュニケーションを促し，参加者の自己肯定感を高める可能性が示唆された。今年度は，当食支援プログラムの対象年齢を拡大するために，小学校低学年児童向けの新たな非対面式調理プログラムを実施した。このプログラムの実施可能性とその効果を明らかにすることを今年度の目的とした。小学校2～3年生34名を対象として，前後比較デザインにて，2022年7月から8月にかけて全5回（週1回）のプログラムを実施した。プログラムの主たる内容は，参加者が自宅で調理動画を視聴し，調理することである。参加者には，食材および調理手順を解説した動画を提供した。各回の調理終了後，参加者個人にフィードバックのメッセージを送付した。その結果，調理に対するセルフエフィカシー（数値が小さいほどセルフ・エフィカシーが高いことを意味する）の中央値（25，75パーセントタイル値）は，プログラム参加前18.5（16.0，23.0）からプログラム参加後13.0（11.3，16.0）にかけて有意に向上した（P＜0.001）。プロセス評価およびプログラムの効果の評価から，当プログラムは，低学年児童に向けて実施可能であり，調理に対するセルフエフィカシーを高める食支援として有用であることが示唆された。
