わが国の食肉工場(と畜場・部分肉製造工場)は,欧米先進国と比較して,規模が小さく,生産性が低く,衛生状態も悪いところが多い。本研究は,こうしたわが国食肉工場の現状に鑑み,岩手・鹿児島両県の産地食肉工場を対象として,豚処理部門における低生産性の数量把握,原因究明を図るとともに,西欧の食肉処理システムとの比較,日本の自動処理システムの提示などを行い,今後の改善方向を示すことを目的としている。とくに本研究では,両工場におけると畜ライン,部分肉製造ラインの1頭当たり処理コストの算出に多大な努力を傾注している。学会レベルにおいてこうした研究が乏しい現状では,ここでの成果は画期的なものとなるであろう。とくに調査対象工場はわが国を代表する食肉工場であり,そこでのコスト計算がなされたことは,学会はもとより,産業界,官界に与える影響も大きいものと思われる。本研究で明らかとなった主要な論点は次の通りである。(1)現状は1日数時間しかラインが動いておらず,稼働率に問題がある。この稼働時間は西欧の半分でしかない。(2)その原因は,集荷能力のみならず,食肉衛生検査体制にも問題があって,食肉工場だけの努力では解決がつかない。行政の前向きの対応が必要である。(3)施設の設置後すでに30年近くを経過し,当時の最新技術が今日では旧式になっている。このためラインがきわめて労働集約的であり,これがコスト増をもたらす主要な原因である。(4)ラインの部分的改良では生産性向上は見込めない。施設の全面改修,機械の総入替えが要請されるが,これには多大な投資を必要とするという困難性が伴う。

The meat factory in China (livestock farm and some meat production factories) is relatively small in scale, low in productivity, and high in hygiene. This research is based on the current situation of meat eating factories in Kosutaka, the origin meat eating factories in Iwate and Kagoshima Prefecture, and the quantitative grasp of the low productivity in the dolphin processing department. The reasons are also clarified. In addition, the comparison of meat processing systems in Western Europe and the tips of Japan's automatic processing systems are discussed, and the direction for future improvement is indicated. This study is aimed at calculating how much effort is devoted to the production of meat in the factory. The research of the society is insufficient, and the achievements are insufficient. The investigation workshop is representative of the meat workshop, and the calculation is based on the influence of the industry and the government. The main argument of this study is that it is difficult to understand. (1)The status quo is 1 day. The time for this is half of Western Europe. (2)The reason is that the ability to collect loads is not enough, the problem of meat hygiene inspection system is not enough, and the efforts of meat factories are not enough to solve it. The administrative direction is necessary. (3)It has been nearly 30 years since the installation, and the latest technology at that time is now in the old style. The main reason for this is that (4)Some of the improvements in productivity are upward. To implement a comprehensive overhaul, machinery replacement is required, and how much investment is necessary is difficult.
