To investigate the effects of antioxidants in foods on the aging of biological function, senescence accelerated mice (SAM) were used throughout this study as a test animal, in addition to Wistar rats. Sesame seed products, sesaminol isolated from sesame oil and catechin isolated from green tea were used as antioxidants and the following results were obtained.1) By long term feeding with the diets containing high levels of crushed sesame seeds, the peroxidation of lipids in the liver and increases of lipofuscin in the testis were effectively depressed in comparison with the control group without crushed sesame seeds.2) The addition of crushed sesame seeds to the diets suppressed the grading score for evaluation of the degree of senecence of SAM, especially the score for glossiness and coarseness of skin hair.3) Peroxidized lipids in the liver and plasma, and hemolysis and pyruvate kinase activity in the plasma were markedly increased in rats fed a tocopherol deficient diet. The addition of sesame products (crushed sesame seeds and oils) which contained -tocopherol exclusively, lowered these characteristics to the same level as the diets containing -tocopherol. However, the addition of -tocopherol to the tocopherol deficient diet depressed the characteristics less than the diet containing -tocopherol.4) The increase of peroxidized lipids in the liver of SAM fed with tocopherol deicient diets was depressed by the addition of sesaminol (0.1%), a potent antioxidative lignan in sesame oil. The dosage of carbon tetra chloride solution to rats also induced lipid peroxidation in its liver, but it was suppressed to an ordinary level by the addition of sesaminol to the solution.5) On the same experiments using tocopherol deficient diets, a slight depression of lipid peroxidation in liver, kidney and plasma was observed by the addition of catechin and its analogues from green tea to the diets.
