We did molecular level study of membrane-bound quinoproteins or flavoproteins and respiratory chain of “oxidative fermentation”, especially for sorbose, dihydroxyacetone and acetic acid fermentations, of acetic acid bacteria. As the resultswe elucidated 1) electron transfer route of the respiratory chain2) finding of novel oxidation reaction of the enzymes3) findings of enzymes for intracellular assimilationand also we found novel enzymes based on the biochemical or bioinformatic analyses.
