项目摘要

本研究の目的は、酒造好適米市場で発生している市場の失敗の要因を解明し、酒造好適米の需要と供給を適切に紐づける仕組みを構築することである。上記の目的を達成するために、R４年度は高知県内の酒造メーカー、JA高知県米穀部へのヒアリング調査を実施した。酒造メーカーのヒアリングでは、酒造好適米の化学的な性質に対する考え方に加え、胴割れ米（砕米）への対応に関する考え方が明らかとなった。これは既存研究においてしばしば指摘されていることであるが、依然、改善なされていないことが明らかとなった。そのため、当初予定になかった搗精機（精米機）メーカー２社のヒアリングを実施し、酒造好適米の搗精に関する調査を行った。２社のヒアリング結果から、搗精技術（搗精機の能力）は年々向上しており、さらに搗精機メーカーは多様な品質の酒造好適米に対応した搗精が行える仕組みを整えていることが明らかとなった。そのうえで、胴割れ米（砕米）の発生が改善していない点については、乾燥・調整といった搗精前段階が重要であることが示唆された。本年度の研究によって、高知県の酒造メーカーの現状や課題を浮き彫りにしつつ、新たな取引の仕組みについて検討を行うことが出来た。当初検討していた化学的成分を品質に導入する仕組みについても方向性を定めつつ、議論を深めることが出来た。これらを具体的な仕組みとして導入するためにも、過去のアンケート結果も踏まえた論文を発表予定である。またR５年度は高知県だけにとどまらず、酒造好適米及び日本酒生産の先進地域である広島県を対象に、酒造好適米生産者及び酒造メーカーの調査を行う。すでにR４年度にJA広島米穀部及び生産者に対して事前のヒアリング調査及びアンケート調査を実施している。

The purpose of this study is to understand the main reasons for the failure of the wine-making rice market, and to construct the appropriate mechanism for the supply and demand of wine-making rice. The above objectives have been achieved. In the year of R4, we conducted a survey on wine production in Kochi, Japan. The chemical properties of wine making and wine making are studied in detail. This is the first time I've seen a book. In 2015, we conducted a survey on the advanced regions of Kochi, Sake Co., Ltd., and Sake Co., Ltd.
