G. Cinelli-Esperia Corporation in Woodbridge, Ontario was established in 1972 and is one of the principal manufacturers of equipment for commercial bakeries in Canada. The company specializes in layout and design of bakeries, machines for mixing and preparation of breads and pastries, and fabrication of baking ovens and other bakery equipment. To remain competitive it is essential for oven manufacturers to provide energy efficient products since energy efficiency is becoming increasingly important to bakery owners who are trying to reduce their operating costs. In collaboration with the University of Toronto, G. Cinelli-Esperia Corporation proposes to design a new generation of energy efficient ovens. The objectives of the proposed project are to: design a high efficiency heat exchanger for the G. Cinelli-Esperia Corporation's rotary rack oven; build and test the heat exchanger; develop a computer model to predict the air velocity distribution in the oven; redesign the oven vents, if necessary, to improve air circulation; and test the oven to ensure that it meets the standard required for Energy Star certification.
