This research will reveal the molecular basis for the design of plant protein delivery systems to entrap and release bioactive molecules in a controlled manner. The direct measurement of protein interactions and the in situ spatial mapping of protein structures will allow us to relate structure and function in the complex environment of food processing. We can create novel nutraceutical delivery systems within foods to improve public health and reduce the risk of chronic disease. These applications will be rapidly transferred to pharmaceutical and biomedical industries because consumers are demanding safe, natural and effective biomaterials of plant origin.
