Sultan of Samosas Inc. (SoSi), located in Toronto, Ontario, is the leading specialty food producer of Samosas. Since established in 1996, SoSi has supplied specialty foods to Canadian and overseas markets. As a result of its research, SoSi developed a production technology patented in Canada, US and EU, which can produce samosas of a unique quality. However, the technology requires too much labor in its current form, thus the company cannot meet the production requests from domestic and overseas markets for much more samosas. Therefore, there is an urgent need to automate the samosa manufacturing processes to significantly increase the production volume by minimizing human labor and reducing processing time, while maintaining/improving the unique qualities of current technology. ** Therefore, main objective of the project is to develop a robotic food production system that can mechanize/automate the samosa manufacturing processes. Two stages of solutions will be investigated: The first stage is to mechanize the classic samosa production process by developing an optimized, dedicated food processing machine line. The second stage is to automate the manufacturing process using a humanistic robotic system that mimics the motion of the human workers.** Food and Agriculture is one of the most important industries in Canada, and the outcomes of this project can offer direct benefits to these industries. Various food and agriculture products such as flour, meats, vegetables, oils, fish and seafood are used to make samosas; however, many samosas are currently simply being imported. This project will develop a new robotic food production technology that help significantly increase the production volume; thus it can promote the markets not only for Canadian food and agricultural products but also for science and business. It also enables the export of samosas to foreign regions such as US and EU while creating opportunities for technology transfer through licensing. The project also helps downstream sectors, including retailers, hotels and restaurants.****
