The "upcycling" by the mass production of insect larvae is a tangible opportunity to add value to waste organic materials in a sustainable and eco-friendly way. The larvae have a voracious appetite for a wide range of organic waste, and bio-products and markets are diverse. Once transformed, larvae are a source of protein, oil, compost and other extracts (chitin, enzymes, antibiotics) that are of great interest for the agri-food, medical, pharmacological or energy markets. Despite a significant industrial potential, industrial efforts in central/eastern Canada have been limited. The implementation of the bioprocess (bioconversion of waste material by fly larvae) will depend on our ability to identify the best model of production suiting local conditions to provide reliable quality fly products in sufficient volume and at competitive prices.Our project aims to join the concerted efforts of the Université Laval (Canadian research leader in feed and food), the Quebec company SANIMAX (North American leader in the recycling of agro-food residuals) and the Netherlands company PROTIX (world leader in mass-fly rearing) to: 1) Continue the discussion with the Canadian Food Inspection Agency (CFIA) for the evaluation of the safety and effectiveness of flies based foods and the establishment of a regulatory framework leading to the approval and marketing of these products in Canada; 2) characterize the potential for recovery of residual organic materials collected from Quebec food retailers by SANIMAX ; 3 ) Mount nutritional tools to measure nutrient digestibility in larvae and optimization of processes , and 3 ) Adapt production protocols ( PROTIX ) to the Quebec reality ( SANIMAX ) .While training highly qualified personnel, this three-year project will regularly transfer knowledge to the industry, the scientific community and the general public.
