Pusateri's Kitchen Limited, operating as Pusateri's Fine Foods, has served the community in Toronto as anauthentic butcher and a provider of fine prepared foods since 1963. Today, they proudly serve a diversecollection of gourmet, artisanal, and imported products through their five stores located across the GreaterToronto area. Pusateri's currently sells 26 types of soup and stew products and are interested in expanding theirmarket into other retail stores and restaurants around the province but are challenged by their existing - mostlymanual - production method and short (30 days) shelf life.Pusateri's seeks to collaborate with Conestoga's Institute of Food Processing Technology (IFPT) on a researchproject to extend the shelf-life of their 26 soups and stews. The team at IFPT will investigate possible recipeand process modifications to extend the shelf-life of these soups. While the outcome of this research projectwill enable Pusateri's to scale up their production facilitating market expansion, IFPT will benefit from trainingHQPs that will deliver these skills into the Canadian Food Industry.
