Manitoba is well suited to oat production; yields are the highest in western Canada. With its proximity to major US processing markets (via the Winnipeg/Minneapolis corridor), Manitoba is especially positioned to capitalize on new food opportunities related to oats. Emerson Milling Inc (EMI) is a commercial Manitoba oat milling operation which is expanding from primary oat processing into higher added value manufacturing systems. The following approaches will be used to develop dairy-based prototypes suitable for further testing, market development, and consumer acceptance:
