Excess intake of phosphorus has been considered to increase chronic kidney disease-mineral and bone disease and risk of cardiovascular complications. As it has been needed to develop a novel nutrition management to prevent such complications in chronic kidney disease patients, we attempted to establish "phosphatemic index" to evaluate how each food can affect postprandial serum phosphorus levels. In this study, we developed an "phosphatemic index" based on time-dependent curve of postprandial serum phosphorus concentration in healthy young Japanese.
