醤油醸造業は、近世・近代において重要な産業であった。しかし、その研究は最大産地の千葉県の醤油醸造業の研究が中心である。そこで、主産地の一つの岡山県の醤油醸造業について、京阪神市場のライバルである香川県小豆島の醤油醸造業と比較しながら研究することで、近代の醤油醸造業史の解明に寄与したいと私は考えた。しかし、その中で着手した岡山県児島郡の尾崎醤油の研究は、史料が多いため一部の検討に止まっていた。本年度、尾崎醤油史料の解読と検討を行ったが、分量が多くまだまだ途中である。尾崎醤油も加入する県外への醤油移出組合の備前醤油醸造組合の関係史料が新たに見つかり、これにより組合の活動を検討した。岡山県醤油の移出先の京阪神や広島への醤油移出入状況を検討するために、京阪神や広島で調査を行った。また、岡山県醤油醸造業との比較のために小豆島醤油醸造業関係の史料を写真で収集し、解読に着手した。備前醤油醸造組合の関係史料は組合長の近藤三郎二の旅日記であり、これにより幕末～明治前期、頻繁に京阪神で兵庫県竜野などの醤油産地と値極め(価格協定)の会合が行われていたことが確認できた。尾崎醤油の史料は、分量が多く、研究はまだまだ途中である。しかし、検討できた限りでは、明治27年に神戸に販売店の尾崎醤油店を出してから、神戸での販売はこの尾崎醤油店の西店が中心で東店は少なく、その西店も次第に小豆島醤油の進出で岡山の尾崎醤油の製品の取り扱いは減少している。そうした中、尾崎醤油は、和歌山県方面、岡山市の師団など、新たな取引先を開拓しようとしていた。こうした神戸市場での販売減少と新規市場の開拓という動きが、大正8年に尾崎醤油を中心に児島郡の中小醸造家により大阪に醤油販売会社の児島醤油株式会社が設立されることにつながっていくと考えられる。これからも引き続き、尾崎醤油の史料の解読と検討を続けていきたいと考える。
