昨年度、家庭で、同一の幼児がスプーンから箸を初めて導入する時期に、食具による使用行動の相違点と類似点を握し、その後どのように箸の使用行動を習熟させていくのか、縦断的な発達変化を検討した。その結果、(1)利き手の定着、(2)手づかみと食具使用の比、(3)箸にのせる操作(4)箸ではさむ直前・はさむ時、口に運ぶ時の持ち方の移行(5)両手の協調、(5)1口量の調整等の観点を行動評価項目として重視する必要のあることが明らかになった。この結果をふまえ、本年度は、研究1として、箸を使い始めの時期2・3歳児を担当する保育士約5名と,養育者10人を対象に、平成13年5月に保育士及び養育者にとって箸を使い始める時期に重要度の高い情報と,その活用例について,グループフォーカスインタビューを実施し、箸を初めて使う時期の食具使用行動をめぐる養育者や保育者自身の食教育ニーズを質的に把握した。研究2として、甲府市内幼稚園及び保育園計10園に在園する2・3歳児クラスの養育者約300人,保育者50名を対象に、平成13年9月に,幼児のスプーンから箸への移行過程での行動評価のチェックリストを含んだ質問紙を作成し,実際に養育者や保育者が使用可能であるか,チェックリストの有効性を確認し,食教育のニーズの量的な実態を把握した。以上の結果、幼児のスプーンから箸への移行過程での行動評価チェックリストを作成し、食教育プログラムを提案することができた。
