本研究は、グローバルに広がる現代ハラール産業とその影響について、制度化やサービス・消費にみる規範と実践、飲食実践を通した自己・他者認識を明らかにすることを目的としている。台湾と日本における制度化の実態、商品開発、人びとの食実践を対象とし、その他の食品認証との比較から、「お墨付き」がもたらす社会的相互作用を明らかにする。年度前半は、主にオンラインでの文献収集を行い、日本・台湾のハラール認証の制度化とベジタリアン表示について資料の解読とデータの整理を行った。台湾のハラール認証の担い手の多様化が進む一方、主に旅行者を念頭においた情報の集約が公的機関および民間で進められている。イスラームと観光に関する共同研究に参加し、観光活動とムスリムの飲食について意見交換した。また、ハラール認証基準に関する共同研究会に参加し、各国事情について意見交換した。年度後半は、オンラインでの資料収集を継続し、資料の解読とデータの整理を行った。3月の台湾での現地調査では、渡航できなかった期間に刊行された文献・資料を中心に収集するとともに、店舗や商品、メニューでの表示方法を収集した。「酔わせるもの」についての飲食実践の事例を整理し、中国語圏のイスラームに関する国際会議で報告をした。また、飲食と多文化理解に関するセミナーで報告をし、学校現場での食の多様性への取り組みについて意見交換した。これらの報告内容について論稿としてまとめる準備を進めている。四年間の研究の初年度に際し、資料の読解と分析から制度化における標準化と多様化の併存、表示における多様性と工夫が見えてきた。これは、次年度以降に実施する人びとの生活実践における認識と適用、制度化における国際動向との関わりについての調査・考察にむけて不可欠な基盤となる。
