项目摘要

子ども期の経済状況と成人期の食行動や食育意識との関連性を論じた研究は極めて限られている。そこで今年度は，子ども期における家庭の経済状況が成人後の食生活・食卓環境や食に関する子どもへの働きかけ（食育）行動に及ぼす影響を定量的に明らかにすることを目的とした。小学校３年生から６年生の子どもを有する既婚の母親300人を対象に実施したWebアンケート調査の個票データを用いて，カテゴリカル共分散構造分析による定量分析を行った結果，以下のことが明らかとなった。１）子ども期における親との離別・死別，父親の失業や大病などのショックが子ども期における家庭の経済状況に悪影響を及ぼす。２）子ども期における家庭の経済状況が現在（成人後）の社会経済的地位を通じて母親自身（現在）の食生活と食卓環境，食に関する子どもへの働きかけ行動に影響を及ぼす。３）子ども期における家庭の経済状況が当時の食生活と食卓環境に影響を及ぼし，そのことが母親となった現在の食生活や食卓環境のみならず，食に関する子どもへの働きかけ行動にも影響を及ぼす。４）上述した１）から３）の指摘も勘案すると，子ども期における親の離死別や父親の失業・大病などのショックが母親となった現在でも，自らの食行動や食に関する子どもへの働きかけ行動に少なからず影響が残る。５）子ども期における家庭の経済状況が成人後の食行動・食育行動に及ぼす間接効果を比較すると，自身の食生活と食卓環境および食に関する子どもへの働きかけ行動のいずれにおいても，意外にも「子ども期における経済状況」から「現在の社会経済的地位」よりも「子ども期の食生活」や「子ども期の食卓環境」を通じた影響の方が相対的に大きいことが明らかとなった。
