项目摘要

わが国では食品ロスの削減が国の重要課題と位置づけられており、SDGsにおいても目標とされている。また、農林水産省が「若い世代の食事習慣に関する調査結果」を公表し、「第4次食育推進基本計画」では、食育の重要性が指摘されており、これらを明らかにすることが食品ロス削減には必要不可欠であると考えられる。そこで、本研究では、国内・海外の食育および食品ロスの現状に関する文献を調査し、各事例をもとに課題を抽出して、それぞれの課題の分類、整理を行い、対応策を考察した。さらに、現在行われている滋賀県内の小学校での食育の取り組みの現状把握と課題抽出を行うために、滋賀県内の小学校において、協力が得られた小学校にヒアリング調査を予定していた。しかし、COVID-19の感染拡大により小学校側から対面でのヒアリング調査は難しいとの回答があった。そのため、協力が得られた小学校にメール添付で送付する方法に切り替えてヒアリング調査を実施した。得られたヒアリング調査結果を取りまとめ、調査結果の全体把握を行った。その結果をもとに、現在の滋賀県内の小学校での食育の現状把握と課題抽出についてまとめ、考察した。本年度の成果である関連資料・文献の整理および対応策の検討やヒアリング調査結果（栄養教諭の先生方のご意見）を参考にして、次年度予定している小学生の食育の受講の有無と食や食品ロスに関する意識の変化との関連を分析するためのアンケート調査に用いるアンケートの作成・設計を行う。

In this study, we investigated the literatures related to the current situation of food and food industry in China and overseas, extracted the problems of each case, classified and organized the problems, and investigated the countermeasures. Today, the current situation of food and education in primary schools in Shiga Prefecture is grasped and the project is extracted. The primary schools in Shiga Prefecture are organized and cooperated to obtain the information of primary schools. The COVID-19 infection rate is higher in primary schools than in primary schools. The survey was conducted on the basis of a survey conducted by the Ministry of Education and the Ministry of Education. Please obtain the results of the comprehensive survey and fully grasp the results of the survey. As a result, the current situation of food and education in primary schools in Shiga Prefecture has been grasped. The results of this year are as follows: Relevant data, document arrangement, policy discussion, research results (comments from the health education department) for reference, and the results of the research for the next year are scheduled.
