项目摘要

本研究は、食品ロスに関する価値観が転換し、変化した行動が継続的に行われる要因を明らかにすることを目的とした。方法としては、ライフスタイルの構造を重層的に明示化するオントロジー工学の行為分解木手法を用い、くさりかけ野菜の処理・対処における共通概念を見出し、それに基づきワークショップ及びアンケートを実施し、ナラティブ・アプローチを用いた場合と共通概念を提示する場合の比較分析を行った。くさりかけ野菜の処理・対処における共通概念については、オレンジページ2020年発行の『これってまだ食べられる? くさりかけ事典食べようび』に記載された野菜30種類を対象とした。行為分解木の記述の結果、くさりかけ野菜を有効活用するには野菜の種類に限らず共通の方式概念が抽出された。これらを用いて、食材に対する個別知識があれば食べられるものを捨てずに済む。また、食材の対処方法に関する基本的な概念があれば、さまざまな食材に応用できるのではないか、という仮説のもと、ワークショップ及びアンケートを実施した。その結果、情報提供には意識変化の効果があるが、概念構造を伝えるよりも個別事例（ナラティブ）を伝える方が意識・行動変化に影響があり、事例数が最も少ない2事例の情報提供の場合が、実践を促すことが明らかとなった。実際に、実践にはレタスが選ばれることが多く、やりやすい野菜が試されていると考えられる。より効果的に意識・行動を変化させ概念構造を転換するためには、最初のインプットは興味深かった、心が動いたと感じさせるような事例数が少ない情報提供にとどめ、知識を周囲の人に伝える機会を与え、その上で、くさりかけ野菜の処理・対処を実践してもらうのが良いと考えられる。さらに他の食材についても処理・対処方法を知りたくなるよう促すことができれば、今後の野菜・食材の廃棄を減らすよう段階的に概念構造が転換・定着していく可能性を見出した。
