Synthetic polymeric gels are widely used in pharmaceutical industry for controlled/target delivery of drugs to maximize the efficiency while minimizing the side-effects. In the food industry there are analogous opportunities for delivery of bioactive molecules (peptides, vitamins, minerals etc.) - but there are unique problems that need be addressed. Health food consumers demand these gels be made from food grade materials.
