Food particles' shape, size and size distribution determine crucial product properties such as mouthfeel, texture,flavour, appearance and processability of raw materials, as well as shelf life. In order to produce food particlesof consistent size and shape, it is very important to optimize and monitor manufacturing steps throughout theentire production process. Within the original engage project, we have explored the feasibility of combiningmicrofluidic channel technology with an image sensor for rapid analysis of particles in food industry. Tocontinue the development, we will further perform the experimental realization of digital in-line holography forfood particle detection. We will utilize a microfluidic-based particle sampling method and a CMOS/CCDcamera for achieving high-throughput characterization of food particles. With real-time food particlemonitoring, it can potentially improve the food production quality.
